Ingredients

  • 4 (4 oz.) sole fillets
  • 1/8 tsp. pepper
  • 1/3 c. flour
  • 2 egg whites
  • vegetable cooking spray
  • 1 Tbsp. margarine
  • 1/2 c. Chablis or other dry white wine
  • 1/3 c. chopped green onions
  • 3 Tbsp. lemon juice

Instructions

  1. Sprinkle the sole fillets with pepper and dredge in flour.
  2. Dip the fillets in lightly beaten egg whites and then dredge in flour again.
  3. Coat a large nonstick skillet with vegetable cooking spray.
  4. Add 1/2 teaspoon of margarine to the skillet and heat over medium until hot.
  5. Add two fillets to the skillet and cook for 4 minutes on each side, or until fish is lightly browned and flakes easily.
  6. Remove the fillets from the skillet and keep warm.
  7. Repeat the cooking process with remaining fillets and margarine.
  8. Add the wine, chopped green onions, and lemon juice to the skillet.
  9. Cook until the mixture reduces to 1/4 cup.
  10. Spoon the lemon sauce over the cooked fish and serve.
