Ingredients

  • 6 boneless chicken breasts
  • salt and pepper
  • 1/2 cup butter
  • 2 tablespoons dry sherry
  • 2 tablespoons lemon juice
  • 2 teaspoons grated lemon peel

Instructions

  1. Season the chicken breasts with salt and pepper, then flatten them using a meat mallet or rolling pin.
  2. Melt butter in a heavy large skillet over medium heat.
  3. Add the flattened chicken breasts to the skillet and cook until browned, about 5 minutes per side.
  4. Add dry sherry and lemon juice to the skillet, then bring to a boil.
  5. Turn the chicken breasts to coat them in the sauce.
  6. Stir in grated lemon peel.
  7. Place the cooked chicken on a plate.
  8. Pour the sauce over the chicken and top with Parmesan cheese.
