Lemon Tassies are delightful mini tartlets with a buttery crust and tangy lemon filling, perfect for parties or as a sweet, citrusy treat.

Ingredients

  • 1/4 cup butter, softened
  • 3 oz. cream cheese, softened
  • 1 1/4 cup flour
  • 3 Tbsp. fresh lemon juice
  • 3 Tbsp. butter, melted
  • 2 large eggs
  • 2/3 cup sugar

Instructions

  1. Mix 1/4 cup butter and cream cheese in a mixer bowl until light and fluffy.
  2. Add flour and beat until crumbly.
  3. Shape dough into balls and press into tart pans or mini muffin tins.
  4. Combine lemon juice, melted butter, eggs, and sugar to make the filling.
  5. Pour filling into prepared crusts.
  6. Bake at 350°F (175°C) for 15 minutes or until filling is set and crust is golden.
