Lemon Yam Puff is a creamy, citrus-flavored mashed yam dish with a sweet and tangy glaze, perfect as a comforting side for family dinners or holiday gatherings.

Ingredients

  • 4 lb. yams
  • 1 cup packed brown sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon salt
  • 2 teaspoons grated orange
  • 2 teaspoons grated lemon rind

Instructions

  1. Cook unpeeled whole yams in boiling water for 30 minutes or until tender; drain.
  2. Peel the yams and mash until smooth.
  3. If the mash is dry, add a little hot water to achieve desired consistency.
  4. Add remaining ingredients (brown sugar, butter, salt, grated orange, lemon rind) and beat until light and fluffy.
  5. Transfer the mixture to a greased 2-quart casserole dish.
  6. Bake in a preheated oven at 350°F (175°C) for 30 minutes.
