- Cook unpeeled whole yams in boiling water for 30 minutes or until tender; drain.
- Peel the yams and mash until smooth.
- If the mash is dry, add a little hot water to achieve desired consistency.
- Add remaining ingredients (brown sugar, butter, salt, grated orange, lemon rind) and beat until light and fluffy.
- Transfer the mixture to a greased 2-quart casserole dish.
- Bake in a preheated oven at 350°F (175°C) for 30 minutes.
