Ingredients

  • 1 (3 oz.) pkg. lemon-flavored gelatin
  • 1 c. boiling water
  • 1 (8 1/4 oz.) can crushed pineapple
  • 1 (8 oz.) carton lemon yogurt
  • 1 large cucumber, peeled, seeded and shredded

Instructions

  1. Dissolve lemon-flavored gelatin in 1 cup boiling water.
  2. Drain crushed pineapple; reserve the syrup.
  3. Add cold water to the reserved pineapple syrup to make 2/3 cup. Stir the syrup into the gelatin and let it cool.
  4. With a rotary beater, beat lemon yogurt into the cooled gelatin mixture; chill until partially set.
  5. Fold in the crushed pineapple and shredded cucumber.
  6. Pour the mixture into a 4-cup mold and chill until firm.
