Ingredients

  • 1 1/2 lb. small, fresh green beans
  • 1 c. cherry tomato halves
  • 1 Tbsp. lemon juice
  • 1 tsp. olive oil
  • 1/2 tsp. grated lemon rind
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground pepper

Instructions

  1. Wash green beans.
  2. Trim ends and remove strings.
  3. Drop beans into a large saucepan of boiling water.
  4. Cook for 7 minutes or until crisp-tender.
  5. Drain well.
  6. Combine the beans and cherry tomato halves in a large bowl; set aside.
  7. In a small bowl, combine lemon juice, olive oil, grated lemon rind, salt, and pepper; stir well.
  8. Pour the lemon dressing over the vegetables, tossing gently to coat.
