Ingredients

  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 Tbsp. oil
  • 3 c. boiling water
  • 1 c. dry lentils, washed
  • 1 Tbsp. dried mint
  • 1 Tbsp. curry powder
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 1 tsp. salt
  • 1 c. Velveeta cheese, cubed
  • 1 small jar hot picante sauce

Instructions

  1. In a medium-sized pan, fry chopped onion and minced garlic in oil until browned.
  2. Add boiling water, washed lentils, dried mint, curry powder, turmeric, cumin, and salt.
  3. Cover and bring to a boil.
  4. Reduce heat and simmer for 15 to 20 minutes, until lentils are fully cooked, adding more water if mixture becomes too thick.
  5. Stir in cubed Velveeta cheese and hot picante sauce until cheese melts and ingredients are well combined.
