Ingredients

  • 2 lb. fresh spinach
  • 1/2 c. minced white onion
  • 1 Tbsp. olive oil
  • 1 1/2 Tbsp. chopped dill

  • 1 c. cottage or ricotta cheese
  • 1/3 lb. crumbled feta cheese
  • 2 eggs
  • 1 1/2 c. wheat germ
  • 1 1/2 Tbsp. melted butter
  • 1 small onion, chopped

Instructions

  1. Chop the fresh spinach.
  2. Saute minced white onion in olive oil until transparent.
  3. Add spinach to the pan, cover, and cook until most of the moisture evaporates.
  4. Remove from heat and add dill, nutmeg, salt, pepper, cottage or ricotta cheese, crumbled feta cheese, chopped onion, and beaten eggs. Mix well.
  5. Combine wheat germ and melted butter to form a crust.
  6. Press the wheat germ mixture into the bottom and sides of a large, flat baking dish.
  7. Pour the spinach-cheese mixture into the dish, spreading evenly.
  8. Bake in a preheated 350°F oven for 45 minutes or until crisp and brown.
  9. Slice and serve.
