Lentil Shepherd'S Pie

Hearty and flavorful lentil shepherd's pie combines tender lentils, savory tomatoes, and aromatic herbs topped with mashed potatoes, perfect for comforting vegetarian meals.

Ingredients

  • 1 cup dried green or brown lentils
  • 4 tablespoons butter or vegan margarine
  • 2 large onions, peeled and thinly sliced
  • 1 garlic clove, crushed
  • 1 teaspoon dried Herbs de Provence
  • 1 (15 oz) can chopped tomatoes
  • 2 tablespoons soy sauce
  • 2 to 3 tablespoons chopped parsley
  • Salt and pepper to taste

Instructions

  1. Put the washed lentils into a large saucepan.
  2. Cover with water and boil gently until tender, about 45 minutes.
  3. Drain the lentils and preheat the oven to 400°F.
  4. Use 1/2 of the butter or vegan margarine to grease a shallow ovenproof dish.
  5. Saute the onions in the remaining butter or vegan margarine in a large saucepan for 10 minutes.
  6. Add the garlic, dried Herbs de Provence, chopped tomatoes, soy sauce, cooked lentils, chopped parsley, salt, and pepper.
  7. Spoon the mixture into the prepared dish.
  8. Spread the mashed potatoes evenly over the top, drawing the prongs of the fork over the surface to create ridges.
  9. Dot the surface with a little butter or vegan margarine.
  10. Bake for 45 minutes until golden brown.
