Lentil Shepherd'S Pie
Hearty and flavorful lentil shepherd's pie combines tender lentils, savory tomatoes, and aromatic herbs topped with mashed potatoes, perfect for comforting vegetarian meals.
Ingredients
- 1 cup dried green or brown lentils ⓘ
- 4 tablespoons butter or vegan margarine ⓘ
- 2 large onions, peeled and thinly sliced ⓘ
- 1 garlic clove, crushed ⓘ
- 1 teaspoon dried Herbs de Provence ⓘ
- 1 (15 oz) can chopped tomatoes ⓘ
- 2 tablespoons soy sauce ⓘ
- 2 to 3 tablespoons chopped parsley ⓘ
- Salt and pepper to taste ⓘ
Instructions
- Put the washed lentils into a large saucepan.
- Cover with water and boil gently until tender, about 45 minutes.
- Drain the lentils and preheat the oven to 400°F.
- Use 1/2 of the butter or vegan margarine to grease a shallow ovenproof dish.
- Saute the onions in the remaining butter or vegan margarine in a large saucepan for 10 minutes.
- Add the garlic, dried Herbs de Provence, chopped tomatoes, soy sauce, cooked lentils, chopped parsley, salt, and pepper.
- Spoon the mixture into the prepared dish.
- Spread the mashed potatoes evenly over the top, drawing the prongs of the fork over the surface to create ridges.
- Dot the surface with a little butter or vegan margarine.
- Bake for 45 minutes until golden brown.
