Ingredients

  • 1 unbaked (9-inch) pastry shell
  • 1 cup sweetened condensed milk
  • 1 1/2 cups hot water
  • 1/2 teaspoon salt
  • 3 eggs, beaten
  • nutmeg
  • 1/2 teaspoon vanilla
  • 1 1/2 cups coconut (optional)

Instructions

  1. In a medium bowl, combine sweetened condensed milk, hot water, salt, and vanilla.
  2. Add beaten eggs and mix well.
  3. Pour the mixture into the unbaked pastry shell.
  4. Sprinkle with nutmeg.
  5. Bake for 10 minutes at 425°F.
  6. Reduce oven temperature to 300°F and bake for an additional 20 to 25 minutes or until a knife inserted comes out clean.
  7. Allow to cool to room temperature.
  8. Chill before serving.
  9. Refrigerate any leftovers.
