Lima Bean-Broccoli Casserole

Ingredients

  • 2 packages frozen chopped broccoli
  • 2 packages frozen Fordhook lima beans
  • 1 package Lipton onion soup mix
  • 2 cups sour cream
  • 2 to 4 cups sliced water chestnuts
  • 2 cans mushroom soup
  • 3/4 stick margarine
  • 2 to 3 cups Rice Krispies

Instructions

  1. Cook the frozen chopped broccoli and Fordhook lima beans in a large pan according to package directions, using less water than called for.
  2. While the vegetables are cooking, combine Lipton onion soup mix, sour cream, sliced water chestnuts, and mushroom soup in a casserole dish or large mixing bowl.
  3. Drain the cooked broccoli and lima beans, then pour into the sour cream mixture and fold together.
  4. Melt the margarine in a large pan.
  5. Add the Rice Krispies to the melted margarine and stir to coat.
  6. Spread the Rice Krispies mixture on top of the casserole.
  7. Bake uncovered at 350°F until bubbly, about 20 to 30 minutes, or freeze at this point for later use.
