Lima Beans Au Gratin

Ingredients

  • 1 lb. dried lima beans, cooked
  • 1/4 c. chopped onion
  • 1/4 c. chopped celery
  • 1/4 c. margarine
  • 1/4 c. milk
  • 1 c. evaporated milk
  • 1 1/2 c. shredded Cheddar cheese
  • 3 Tbsp. diced pimento
  • 1/2 tsp. salt
  • 1/4 tsp. thyme
  • paprika

Instructions

  1. Cook and drain beans (reserve 1/4 cup liquid).
  2. Saute onion and celery in margarine.
  3. Stir in 1/4 cup flour.
  4. Gradually add milk.
  5. Cook until thick (stirring).
  6. Stir in 1 cup cheese.
  7. Add pimento, salt and thyme.
