Lime And Pineapple Loaves

Ingredients

  • 7 tbsp unsalted butter, softened
  • 1 tbsp finely grated lime peel
  • 1/2 cup sugar
  • 2 None eggs
  • 3/4 cup self-rising flour
  • 2 tbsp milk
  • 6 oz white chocolate, coarsely chopped
  • 2 tbsp lime juice
  • 1/4 cup light cream
  • 1/2 medium pineapple, peeled, cored and thinly sliced

Instructions

  1. Preheat the oven to 300°F. Grease an 8-loaf mini loaf pan and line bottoms with parchment paper. (Volume of each loaf is 3/4 cup.)
  2. Beat butter, lime peel, sugar, eggs, flour and milk in a large bowl with electric mixer, on low speed, until combined. Increase speed to medium; beat for 3 mins, or until mixture is light and fluffy. Divide mixture among loaf pans and cover loosely with foil.
  3. Bake for 25 mins, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; completely on wire rack.
  4. For the lime ganache, stir chocolate, lime juice and cream in small heatproof bowl over small saucepan of simmering water until smooth. Refrigerate until spreadable.
  5. Split loaves in half. Sandwich loaves with half the ganache and half the pineapple. Top loaves with remaining ganache and pineapple.
