Lime And Pineapple Loaves

- Preheat the oven to 300°F. Grease an 8-loaf mini loaf pan and line bottoms with parchment paper. (Volume of each loaf is 3/4 cup.)
- Beat butter, lime peel, sugar, eggs, flour and milk in a large bowl with electric mixer, on low speed, until combined. Increase speed to medium; beat for 3 mins, or until mixture is light and fluffy. Divide mixture among loaf pans and cover loosely with foil.
- Bake for 25 mins, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; completely on wire rack.
- For the lime ganache, stir chocolate, lime juice and cream in small heatproof bowl over small saucepan of simmering water until smooth. Refrigerate until spreadable.
- Split loaves in half. Sandwich loaves with half the ganache and half the pineapple. Top loaves with remaining ganache and pineapple.
