Lime Chicken offers tender chicken breasts infused with bright lime juice, butter, dill, and chives, making it a flavorful dish perfect for quick, elegant dinners.

Ingredients

  • 6 boneless, skinless chicken breasts
  • salt
  • pepper
  • 3 Tbsp. vegetable oil
  • juice of 1 lime
  • 6 Tbsp. butter
  • 1 Tbsp. minced chives
  • 1 tsp. fresh dill or 1/2 tsp. dried dill

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a large skillet, heat vegetable oil over medium heat.
  3. Add chicken breasts and cook until lightly browned on both sides.
  4. Reduce heat and cook for an additional 10 to 15 minutes or until done.
  5. Remove chicken to a platter and keep warm.
  6. In the same skillet, add lime juice and cook until bubbly.
  7. Add butter and cook until slightly thickened.
  8. Stir in dill and chives.
  9. Return chicken to the skillet and heat for a few minutes longer.
  10. Serve over cooked rice.
