Ingredients

  • 3 bell peppers (green, red, or yellow), cut into 1/2-inch strips, diced
  • 1/2 cup chopped onion
  • 2 cups fresh or unthawed frozen corn kernels
  • 1/2 teaspoon ground cumin
  • salt and pepper to taste

Instructions

  1. Place peppers and onion in a microwave-safe 2-quart casserole dish.
  2. Stir to combine and cover tightly with plastic wrap, venting the edge.
  3. Microwave on High for 6 to 8 minutes or until peppers and onion are tender.
  4. Mix in corn and cumin.
  5. Re-cover and microwave on High for 4 to 6 minutes more until heated through.
  6. Drain if necessary, season with salt and pepper, and serve.
