Ingredients

  • 1/2 cup fruit preserves or marmalade
  • 16 slices sandwich bread, crust removed
  • 3/4 cup buttermilk pancake and waffle mix
  • 1 teaspoon sugar
  • 1/4 teaspoon nutmeg
  • 1 egg
  • 3/4 cup milk
  • hot vegetable oil
  • powdered sugar

Instructions

  1. Spread preserves over each slice of bread.
  2. Roll up the bread slices jelly roll fashion.
  3. Tightly wrap each bread roll in plastic wrap and chill for several hours or overnight.
  4. In a bowl, combine pancake mix, sugar, and nutmeg; mix well.
  5. Add egg and milk to the dry ingredients and stir until smooth.
  6. Dip each bread roll into the batter, ensuring it is well coated.
  7. Deep-fry the coated bread rolls in hot vegetable oil until golden brown.
  8. Drain on paper towels and sprinkle with powdered sugar.
  9. Serve warm with additional preserves or marmalade, if desired.
