Ingredients

  • 1 lb. bacon
  • 1 lb. beef liver
  • 3 onions
  • 1/2 cup flour
  • salt

Instructions

  1. Cook bacon until crisp; drain on paper towels.
  2. Cook sliced onions in bacon drippings until soft; remove and set aside.
  3. Put flour, salt, and pepper in a paper bag.
  4. Shake beef liver in the bag until well coated with flour.
  5. Brown liver in bacon drippings.
  6. Place the browned liver in a casserole dish.
  7. Add cooked onions and bacon to the casserole.
  8. Put a small amount of hot water into the drippings; stir until smooth.
  9. Pour the mixture over the liver, onions, and bacon in the casserole.
  10. Cover and bake at 350°F for 1 hour.
