Lo Lo'S Bean Dip

Ingredients

  • 1/2 C canola oil
  • 1/4 C cider vinegar
  • 1/4 C sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 can black Beans
  • 1 can black Eyed Peas
  • 1 bag frozen white Corn, thaw
  • 1 C celery
  • 1 C red pepper
  • 1 C green pepper
  • 1 C red onion
  • 1 sm jar diced red pimento (do not drain)

Instructions

  1. Boil oil, vinegar, sugar, s & p until sugar dissolves. Remove from heat and cool completely.
  2. Drain beans and corn. Small dice vegetables, add to beans along with pimento. Pour dressing over and marinate overnight.
