  • 1 1/2 c. cream
  • 3 beaten egg yolks
  • 3 Tbsp. white dry wine
  • 2 Tbsp. lemon juice
  • 1/4 tsp. salt
  • paprika
  • toast points
  • seafood (lobster, shrimp, scallops), cooked

Instructions

  1. Melt butter in a skillet.
  2. Blend in flour until smooth.
  3. Add cream all at once and cook, stirring constantly, until thickened.
  4. Remove from heat and stir in beaten egg yolks, white dry wine, lemon juice, and salt.
  5. Serve over cooked seafood with paprika and toast points.
