Ingredients

  • 3 eggs
  • 1 c. cooking oil
  • 2 c. sugar
  • 1 tsp. vanilla
  • 2 c. grated zucchini
  • 3 c. sifted all-purpose flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 1/2 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1/2 c. chopped nuts

Instructions

  1. Sift dry ingredients and set aside. Beat together eggs, sugar and oil. Add dry ingredients and mix well. Add vanilla, zucchini and nuts; mix well. Bake in 2 greased and floured pans at 325° for about 1 hour.
