Ingredients

  • 2 lbs butternut squash (or pumpkin, peeled and diced into 1/2 inch cubes)
  • zest of two orange
  • 1 cup orange juice
  • 1 cup olive oil
  • 1 cup sugar
  • 1/4 cup brandy
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 2 teaspoons baking powder
  • 2 tablespoons honey
  • 2 cups raisins
  • 1 lb all-purpose flour (approximately 3 1/2 cups)
  • 1/2 cup sesame seeds

Instructions

  1. Preheat the oven to 350°F.
  2. Grease the sides and bottom of a round pan about 16" in diameter.
  3. Combine all the ingredients, except the sesame seeds, in a large mixing bowl and mix well.
  4. Pour the mixture into the pan and smooth with a spatula.
  5. Sprinkle with sesame seeds.
  6. Bake in the oven for about 1 hour or until golden brown. Cool before serving.
