Ingredients

  • 1/2 oz. fresh yeast
  • 1/2 tsp. sugar
  • 1 3/4 cups warm water
  • 2 tsp. salt
  • 2 1/2 cups whole wheat flour
  • 2 1/2 cups strong white flour
  • 1 Tbsp. vegetable oil
  • 1 medium onion, grated
  • 1 Tbsp. lovage seed

Instructions

  1. Mix the fresh yeast, sugar, and warm water in a bowl.
  2. Leave in a warm place until frothy.
  3. Mix the salt, whole wheat flour, strong white flour, and vegetable oil in another bowl.
  4. Add the yeast mixture and grated onion to the flour mixture, kneading to make a soft dough.
  5. Knead lightly on a floured surface for 10 minutes until the dough is smooth and elastic.
  6. Place the dough in a bowl, cover with a damp cloth, and leave to rise in a warm place for about 1 1/2 hours until doubled in size.
  7. Turn the dough onto a floured surface and knead for 5 minutes.
  8. Shape the dough into rolls or loaves and place on a baking tray or greased loaf pans.
  9. Brush the dough with a little water and sprinkle with lovage seeds.
  10. Leave for 20 minutes.
  11. Bake at 450°F for 10 minutes, then reduce the oven temperature to 400°F and bake for a further 5 to 20 minutes.
  12. Remove from pans and cool on wire racks.
