  • 1/2 c. celery
  • 1/2 c. bell pepper
  • 1/2 c. onion, finely chopped
  • dash of Tabasco sauce
  • 1 Tbsp. lemon juice

Instructions

  1. Heat the plain tomato soup and 1 cup of V-8 juice to boiling point.
  2. Add the lemon Jell-O to the hot mixture and stir until dissolved.
  3. Dissolve the plain gelatin in 1/2 cup of V-8 juice separately.
  4. Add the dissolved gelatin to the Jell-O mixture along with the remaining V-8 juice, stirring well.
  5. Add chopped celery, bell pepper, onion, a dash of Tabasco sauce, and lemon juice to the mixture.
  6. Pour the mixture into a mold and chill until firm.

Tips & Substitutions

To enhance flavor, consider adding fresh herbs like basil or parsley to the mixture. If you prefer a spicier kick, increase the amount of Tabasco sauce. You can substitute the V-8 juice with vegetable juice if desired. For a vegan version, ensure the gelatin used is plant-based, as traditional gelatin is animal-derived.

Serving Suggestions

This tomato aspic makes an excellent appetizer or side dish, especially when paired with a light salad like Green Delight. Serve it with crackers or as a topping for toasted bread. For a complete meal, consider pairing it with grilled chicken or a veggie platter. It can also be a delightful addition to a picnic spread.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 5 days. To reheat, gently warm in a saucepan over low heat, stirring occasionally to prevent sticking. However, it's best enjoyed chilled straight from the fridge as a refreshing appetizer.
