Ingredients

  • boneless, skinless chicken breasts
  • 2 lightly beaten egg whites
  • 1 tsp. garlic salt
  • 1 tsp. dried oregano leaves
  • 1/4 tsp. ground ginger
  • black pepper to taste
  • 1 c. low-fat baking mix
  • 1/2 c. oat bran

Instructions

  1. Mix egg whites and spices (garlic salt, oregano, ground ginger, black pepper) in a small bowl.
  2. Combine low-fat baking mix and oat bran in a shallow pan.
  3. Cut chicken breasts into small chunks.
  4. Dip chicken pieces into the egg mixture, then roll in the baking mix and oat bran to coat.
  5. Place coated chicken on a cookie sheet coated with pan spray.
  6. Bake at 350°F until lightly browned, about 30 minutes.
