Ingredients

  • 1 1/2 lb. chicken breasts, skinned
  • 1/4 package Neufchatel cheese, softened
  • 1 Tbsp. fat-free mayonnaise
  • 1 Tbsp. grated onion
  • 1 Tbsp. sweet pickle juice
  • 1/2 cup finely chopped celery
  • dash of curry powder
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 Tbsp. chopped pimiento
  • dash of hot sauce
  • dash of garlic powder

Instructions

  1. Cook chicken in unsalted water to cover until tender.
  2. Remove chicken from broth, reserving 2 tablespoons of broth.
  3. Allow the chicken to cool.
  4. Bone the chicken and chop it finely.
  5. Combine Neufchatel cheese and mayonnaise, beating until smooth.
  6. Add grated onion, sweet pickle juice, chopped celery, curry powder, salt, pepper, chopped pimiento, hot sauce, and garlic powder; mix well.
  7. Stir in the chopped chicken and reserved broth.
  8. Serve on crackers or lettuce leaves.
