Ingredients

  • 3 egg whites
  • 1 tsp vanilla
  • 1/2 cup sugar
  • 1/4 cup oil
  • 1 cup skim milk
  • 2 2/3 cups flour
  • 3 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Stir the egg whites, vanilla, sugar, oil, and skim milk until just combined.
  2. Add pineapple (drained), blueberries, chopped apples, or cranberries to the mixture.
  3. Divide the batter into muffin tins and sprinkle sugar and cinnamon on top.
  4. Bake in a 375°F oven for 20 to 22 minutes until golden and cooked through.
