Low-Fat Spinach Stuffed Shells
Ingredients
- 1 (10 oz.) pkg. frozen spinach, thawed and water squeezed out ⓘ
- 1 1/2 tsp. minced garlic (in jar) ⓘ
- 1/3 c. Parmesan cheese (Weight Watchers fat-free Parmesan) ⓘ
- 1 egg, beaten or 2 egg whites ⓘ
- fat-free Mozzarella cheese (Healthy Choice is best) ⓘ
- 12 to 15 jumbo shells ⓘ
- 1 c. low-fat cottage cheese ⓘ
- 1 Tbsp. lemon juice ⓘ
- 1/2 tsp. oregano ⓘ
- 2 c. spaghetti sauce (Healthy Choice or marinara sauce) ⓘ
Instructions
- Boil shells until firm but tender.
- Drain and rinse in cold water.
- Mix drained spinach, cottage cheese, garlic, lemon juice, Parmesan cheese and oregano.
- Stir in the beaten egg.
- Stuff the shells with the mixture and place in a baking dish sprayed with cooking spray.
- Top shells with spaghetti sauce and finally, the cheese.
- Bake at 350° until all is hot and the cheese melted, about 20 minutes.
