Low-Fat Spinach Stuffed Shells

Ingredients

  • 1 (10 oz.) pkg. frozen spinach, thawed and water squeezed out
  • 1 1/2 tsp. minced garlic (in jar)
  • 1/3 c. Parmesan cheese (Weight Watchers fat-free Parmesan)
  • 1 egg, beaten or 2 egg whites
  • fat-free Mozzarella cheese (Healthy Choice is best)
  • 12 to 15 jumbo shells
  • 1 c. low-fat cottage cheese
  • 1 Tbsp. lemon juice
  • 1/2 tsp. oregano
  • 2 c. spaghetti sauce (Healthy Choice or marinara sauce)

Instructions

  1. Boil shells until firm but tender.
  2. Drain and rinse in cold water.
  3. Mix drained spinach, cottage cheese, garlic, lemon juice, Parmesan cheese and oregano.
  4. Stir in the beaten egg.
  5. Stuff the shells with the mixture and place in a baking dish sprayed with cooking spray.
  6. Top shells with spaghetti sauce and finally, the cheese.
  7. Bake at 350° until all is hot and the cheese melted, about 20 minutes.
