Ingredients

  • 8 lb. leg of lamb
  • 1/4 cup lemon juice
  • 2 cloves garlic
  • 1/2 teaspoon dried rosemary
  • 1 tablespoon thyme
  • 1 teaspoon basil
  • 1 teaspoon bay leaf or mint
  • 1/2 teaspoon onion salt

Instructions

  1. Wash lamb in lemon juice and discard the lemon juice.
  2. Cut 1/2-inch slits in the lamb, one inch apart, and insert garlic slivers into the slits.
  3. Mix dried rosemary, thyme, basil, bay leaf or mint, onion salt, and pepper, then rub onto the lamb.
  4. Bake at 325°F for 30 minutes per pound.
