Ingredients

  • 1 box yellow cake mix
  • 1 (20 oz.) can crushed pineapple
  • 3/4 cup sugar
  • 2 (3 1/2 oz.) boxes instant vanilla pudding
  • 3 cups milk
  • 1 cup heavy whipping cream
  • 1/4 cup 10x sugar

Instructions

  1. Prepare the yellow cake mix and bake as directed on the box.
  2. Pour crushed pineapple (with juice) into a small saucepan and add 3/4 cup sugar.
  3. Bring to a boil and cook for 20 minutes.
  4. Pierce the hot cake with a fork and pour the cooked pineapple mixture over it. Allow to cool completely.
  5. Combine the vanilla pudding mix with 3 cups of milk and blend until thick.
  6. Spread the pudding mixture evenly over the cooled cake.
  7. Beat the heavy whipping cream until thick, add 1/4 cup powdered sugar, and beat until stiff peaks form.
  8. Spread the whipped cream over the pudding layer and sprinkle with coconut.
  9. Keep refrigerated until ready to serve.
