Ingredients

  • 4 cups flour
  • 1 tablespoon baking powder
  • 3/4 cup margarine
  • 1 1/2 cups sugar
  • 1 tablespoon almond extract
  • 1 tablespoon vanilla extract
  • 4 eggs

Instructions

  1. Mix flour and baking powder together, then set aside.
  2. Beat sugar and margarine until fluffy, then add to the flour mixture.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in almond and vanilla extracts.
  5. Mix well to combine.
  6. With a large spoon, fold in one can of macadamia nuts.
  7. Form batter into two 2-inch wide loaves, around 1-2 inches high and 15 inches long, on a cookie sheet.
  8. Bake at 325°F for 30 minutes or until golden.
  9. Remove trays and cool for 10-15 minutes, then reduce oven temperature to 250°F.
  10. Slice loaves into 1/2-inch thick slices.
  11. Place slices standing up on the tray and bake for an additional 30-40 minutes.
  12. Turn off oven and let slices sit for 1-2 hours to become crunchy. Store in an airtight container.
