Ingredients

  • 1 envelope gelatin
  • 4 egg whites
  • 1/2 cup sugar
  • 1/2 cup macadamia nuts
  • 1 cup whipping cream
  • 1 baked 9-inch pie shell
  • 1/4 cup water
  • 4 egg yolks
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla

Instructions

  1. Mix gelatin, sugar, and salt in a saucepan.
  2. Beat together egg yolks, cold milk, and water.
  3. Stir the egg yolk mixture into the gelatin mixture and cook over medium heat, stirring constantly, until the mixture comes to a boil.
  4. Remove from heat and chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon.
  5. Beat egg whites until stiff peaks form.
  6. Fold in chopped macadamia nuts and whipped cream into the gelatin mixture and add vanilla.
  7. Pour the filling into the cooled pie shell.
  8. Chill until the pie is firm.
  9. Top with additional whipped cream and sprinkle with macadamia nuts before serving.
