Ingredients

  • 3 Tbsp. cornstarch
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1/4 c. chopped macadamia nuts
  • 4 egg yolks
  • 2 c. milk
  • 1 tsp. vanilla
  • 1 Tbsp. butter
  • 9-inch baked pie shell
  • sweetened whipped cream

Instructions

  1. Combine cornstarch, sugar, salt, and chopped macadamia nuts in a bowl.
  2. Add slightly beaten egg yolks, stirring until well blended.
  3. Gradually stir in scalded milk, then cook over low heat in a double boiler, stirring constantly, until mixture thickens.
  4. Remove from heat and add butter and vanilla; cool thoroughly.
  5. Pour the filling into a baked pie shell.
  6. Garnish with sweetened whipped cream and sprinkle with additional chopped macadamia nuts before serving.
