Ingredients

  • 8 oz. elbow macaroni
  • 10 3/4 oz. can cream of mushroom soup
  • 1/2 c. milk
  • 1 medium onion, chopped
  • 4 oz. can sliced mushrooms
  • 1 lb. sharp cheese, shredded
  • 1/2 cup shredded cheese reserved
  • 1 cup mayonnaise
  • 1/2 cup chopped bell pepper
  • 4 oz. jar chopped pimento

Instructions

  1. Cook the elbow macaroni according to package directions.
  2. While the macaroni is cooking, mix cream of mushroom soup, milk, chopped onion, sliced mushrooms, shredded cheese (reserve 1/2 cup), mayonnaise, chopped bell pepper, and chopped pimento in a bowl.
  3. Drain the cooked macaroni and mix it with the combined ingredients.
  4. Pour the mixture into a large casserole dish.
  5. Cover and bake at 350°F for 45 minutes.
  6. Remove from oven, sprinkle with the remaining cheese and crushed Cheez-Its crackers, then serve.
