Macaroni Patties

Ingredients

  • 1/4 c. butter
  • 5 Tbsp. flour
  • 1 c. milk
  • 1 tsp. salt
  • dash of paprika
  • 1/2 lb. grated American cheese
  • 1 1/2 c. cooked macaroni
  • 2 Tbsp. chopped pimiento
  • 1 Tbsp. chopped parsley
  • 1 tsp. grated onion
  • fine cracker crumbs
  • 1 egg
  • 1 Tbsp. water

Instructions

  1. Melt butter in top of double boiler.
  2. Add flour and blend. Add milk, salt and paprika.
  3. Cook and stir over boiling water until smooth and thickened.
  4. Add cheese; stir until blended.
  5. Add macaroni, pimiento, parsley and onion.
  6. Turn into a well-greased large flat loaf pan.
  7. Chill until firm.
  8. Cut into 2-inch squares and dip into crumbs, then beaten egg with water and then again in crumbs.
  9. Fry in hot fat until a golden brown.
  10. Garnish with parsley.
