Ingredients

  • 1 1/2 lb. stew beef
  • 2 large onions, chopped
  • 1/2 to 2/3 c. peanut butter
  • 1/2 to 2/3 c. tomato paste
  • salt
  • pepper to taste
  • 1 clove garlic
  • cayenne pepper to taste
  • 2 Tbsp. oil
  • water

Instructions

  1. Chop onion and mix peanut butter with water until fluffy, dilute tomato paste until same volume as peanut butter.
  2. Brown meat quickly in hot oil in large skillet.
  3. Add onions and stir until they are partly cooked not browned.
  4. Add diluted tomato paste and peanut butter and spices.
  5. Stir.
  6. Taste for seasoning.
  7. Cook over low heat approximately 45 minutes or until meat is tender, stirring frequently.
  8. Serve immediately over plain rice.
  9. Serves 4 to 5.
