A hearty, flavorful Mexican-inspired casserole featuring seasoned ground beef, beans, creamy sauce, and crispy chips topped with melted cheddar cheese, perfect for casual gatherings.

Ingredients

  • 1 lb. ground beef
  • 1 onion, chopped
  • 15 oz. can Ranch Style beans
  • 10 3/4 oz. can cream of mushroom soup
  • 10 oz. can Ro-Tel tomatoes
  • 1 cup grated Cheddar cheese
  • Doritos or Fritos

Instructions

  1. Brown the ground beef and chopped onion in a skillet and drain excess fat.
  2. Combine the Ranch Style beans, cream of mushroom soup, and Ro-Tel tomatoes in a bowl.
  3. Add the bean mixture to the cooked meat and stir well.
  4. In a 1 1/2-quart casserole dish, place a layer of chips on the bottom.
  5. Spread the meat and bean mixture over the chips.
  6. Top with grated Cheddar cheese.
  7. Bake at 400°F (200°C) for 30 minutes or until hot and bubbly.
