A colorful, savory salmon and vegetable mold accented with tangy gelatin, perfect for festive occasions or elegant appetizers, combining seafood with crisp cabbage and eggs.

Ingredients

  • 2 cups canned salmon
  • 2 packages lime gelatin
  • 1/4 cup vinegar
  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • 2 cups finely shredded cabbage
  • 3 hard-boiled eggs sliced
  • 1 1/4 cups cold water
  • 1 1/2 cups boiling water

Instructions

  1. Drain and flake the canned salmon, removing skin and bones.
  2. Place the prepared salmon in the bottom of the mold.
  3. Dissolve lime gelatin in 1 1/2 cups of boiling water.
  4. Add 1 1/4 cups cold water, vinegar, lemon juice, and salt to the dissolved gelatin.
  5. Pour half of the gelatin mixture over the salmon in the mold.
  6. Chill until set.
  7. Fill the mold with alternating layers of finely shredded cabbage and sliced hard-boiled eggs.
  8. Cover with the remaining gelatin mixture.
  9. Chill until completely set before serving.
