Ingredients

  • 4 c. confectioners sugar
  • 4 c. flaked coconut
  • 3/4 c. cold mashed potatoes
  • 1 1/2 tsp. vanilla
  • 1/2 tsp. salt
  • 1 lb. dark candy coating

Instructions

  1. In a large bowl, combine confectioners sugar, flaked coconut, cold mashed potatoes, vanilla, and salt. Mix well.
  2. Line a 9-inch square pan with foil and butter the foil.
  3. Spread the coconut mixture into the prepared pan.
  4. Cover and refrigerate overnight.
  5. Cut into 2 x 1-inch rectangles.
  6. Cover and freeze the bars.
  7. Melt the dark candy coating and dip the bars into the coating.
  8. Place the coated bars on waxed paper to set.
