A hearty, layered casserole combining seasoned ground beef, sweet corn, and creamy mashed potatoes, perfect for family dinners and comfort food enthusiasts.

Ingredients

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1 can whole kernel corn, drained
  • 5 peeled and cooked potatoes, mashed
  • salt and pepper to taste

Instructions

  1. Brown ground beef and chopped onions in a skillet and drain excess fat.
  2. Place the cooked beef and onions mixture in the bottom of a 2 1/2 quart Pyrex dish.
  3. Pour drained whole kernel corn evenly over the beef layer.
  4. Spread the mashed potatoes on top of the corn layer.
  5. Dot the mashed potatoes with small pieces of butter.
  6. Bake at 350°F (175°C) for 30 to 35 minutes, uncovered, until heated through and slightly golden on top.
