Ingredients

  • 6 baking or all-purpose potatoes
  • 2 Tbsp. butter or margarine
  • 1 (3 oz.) pkg. cream cheese
  • 1/4 c. low-fat milk
  • 1/2 c. freshly grated Parmesan cheese
  • salt

Instructions

  1. Peel the potatoes and cook until tender.
  2. Mash the potatoes with butter, cream cheese, and milk until fluffy.
  3. Beat in Parmesan cheese, salt, and white pepper to taste.
  4. Turn the mixture into a casserole dish sprayed with nonstick cooking spray.
  5. Press plastic wrap onto the surface; cool briefly, then cover and refrigerate.
