Ingredients

  • 8 medium potatoes
  • salt to taste
  • 4 stalks celery, diced
  • 3 sweet pickles, diced
  • 3 hard-cooked eggs, diced
  • 1/4 onion, minced
  • 1 Tbsp. mustard
  • 1 cup salad dressing

Instructions

  1. Cook potatoes in jackets in boiling water until tender.
  2. Peel and dice the cooked potatoes.
  3. Add salt, diced celery, diced pickles, diced eggs, and minced onion to the potatoes.
  4. Stir in mustard and salad dressing; mix just enough to blend.
  5. Optional: add pickle juice if desired.
  6. Cover and let stand overnight to allow flavors to blend.
  7. Garnish with olives at serving time.
