Ingredients

  • 9 medium baking potatoes
  • 1 Tbsp. grated onion
  • 1/2 cup butter
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2/3 cup warm milk
  • 1 1/2 cups shredded Cheddar cheese
  • 1 cup whipping cream

Instructions

  1. Boil and mash peeled potatoes.
  2. Add grated onion, butter, salt, pepper, and warm milk to the mashed potatoes.
  3. Whip until smooth.
  4. Place the mashed potatoes in a 9 x 13-inch pan sprayed with Pam.
  5. Fold the shredded Cheddar cheese into the whipped cream and spread over the potatoes.
  6. Bake at 350°F for 25 minutes.
  7. For make-ahead, refrigerate overnight and increase baking time by 10 to 15 minutes.
