Make Ahead Vegetable Stuffing

Ingredients

  • 1/2 c. onions or less
  • 1/2 c. celery
  • 4 Tbsp. butter or margarine
  • 1 (17 oz.) can cream-style corn
  • 1/2 c. water
  • 1 tsp. poultry seasoning
  • 1/8 tsp. pepper
  • 1 pkg. or 3 c. herb seasoning stuffing mix
  • 3 slightly beaten eggs

Instructions

  1. In a saucepan, cook onion and celery in butter until tender but not brown.
  2. Add corn, water, poultry seasoning and pepper.
  3. Bring to a boil.
  4. Pour over stuffing mix and toss lightly.
  5. Stir in eggs. Put in a baking dish and pour melted butter over.
  6. Bake at 375° for 25 minutes.
  7. Make ahead and refrigerate, if desired.
  8. Very good.
