Ingredients

  • 8 egg whites
  • 1 cup butter or margarine, softened at room temperature
  • 1 3/4 cups sugar
  • 1 1/2 teaspoons vanilla extract
  • 3 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Grease three 9-inch cake pans on the bottom only.
  2. Line the bottoms with wax paper cut to fit. Grease the paper and lightly dust with flour.
  3. In a large bowl, beat egg whites until stiff; set aside.
  4. In another bowl, cream the butter and sugar until light and fluffy. Add vanilla extract and mix well.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the creamed mixture alternately with milk, starting and ending with the dry ingredients. Mix well after each addition.
  7. Gently fold in the beaten egg whites until fully incorporated.
  8. Divide about 2 1/2 cups of batter into each prepared pan, smoothing the tops.
  9. Bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove the cakes from the oven and immediately invert to remove from pans. Remove wax paper and cool completely on a wire rack.
