- Preheat oven to 350 degrees Fahrenheit. Grease three 9-inch cake pans on the bottom only.
- Line the bottoms with wax paper cut to fit. Grease the paper and lightly dust with flour.
- In a large bowl, beat egg whites until stiff; set aside.
- In another bowl, cream the butter and sugar until light and fluffy. Add vanilla extract and mix well.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the creamed mixture alternately with milk, starting and ending with the dry ingredients. Mix well after each addition.
- Gently fold in the beaten egg whites until fully incorporated.
- Divide about 2 1/2 cups of batter into each prepared pan, smoothing the tops.
- Bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cakes from the oven and immediately invert to remove from pans. Remove wax paper and cool completely on a wire rack.
