Ingredients

  • 1/2 cup uncooked rice
  • 1/2 cup raisins
  • 1 quart milk
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon nutmeg

Instructions

  1. Cook the rice until tender.
  2. Soak the raisins in water until softened.
  3. In a casserole dish, beat milk, vanilla, eggs, sugar, and 1/2 teaspoon nutmeg at high speed for 2 minutes until foamy.
  4. Add the cooked rice and soaked raisins to the mixture.
  5. Sprinkle 1/2 teaspoon nutmeg on top of the mixture.
  6. Bake in a preheated oven at 325°F for 1 hour until set and golden.
