Ingredients

  • 1 whole chicken breast with rib
  • 3/4 cup plain bread crumbs
  • 2 eggs
  • 1/4 cup Parmesan cheese

Instructions

  1. Bone the chicken breast and season it with garlic powder; set aside.
  2. Mix together the bread crumbs and Parmesan cheese.
  3. Dip the chicken into beaten eggs and drain slightly.
  4. Coat the chicken with the bread crumb mixture.
  5. In a frying pan, pour a moderate amount of Crisco cooking oil and fry the chicken until lightly browned on both sides.
  6. Place the fried chicken into a casserole dish.
  7. Bake in the oven at 350°F for 1 hour.
  8. Cover the dish with foil to seal in the juices before baking.
