Ingredients

  • 1 3/4 c. cornmeal (self-rising)
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1/2 c. oil
  • 1 large onion, chopped
  • 1 c. grated cheese
  • 1 c. cream-style corn
  • 3 jalapeno peppers, chopped

Instructions

  1. Mix dry ingredients. Stir in corn, grated cheese, onions and peppers. Blend well. Stir in buttermilk, eggs and oil. Bake in greased 10 x 13 pan or iron skillet at 400° for 25 to 30 minutes or until firm and brown. Serve hot or cold.
