- Boil the yams with the skins left on until tender.
- Remove the yams from the water and allow them to cool.
- Peel the yams and mash them.
- Add orange juice, grated orange peel, vanilla, nutmeg, cinnamon, and butter. Mix well.
- Lightly beat the egg.
- Mix the milk and fructose into the beaten egg.
- Add this mixture to the mashed yams and beat with a rotary beater until fluffy.
- Bake at 325°F (163°C) for 20 minutes.
- Turn off the oven and leave the yams in it for an additional 30 minutes.
