Ingredients

  • 4 large yams
  • 1 Tbsp. orange juice
  • 1 tsp. grated orange peel
  • 1 tsp. vanilla
  • 1/2 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 1 Tbsp. butter
  • 1 egg, lightly beaten
  • 1/2 cup whole milk

Instructions

  1. Boil the yams with the skins left on until tender.
  2. Remove the yams from the water and allow them to cool.
  3. Peel the yams and mash them.
  4. Add orange juice, grated orange peel, vanilla, nutmeg, cinnamon, and butter. Mix well.
  5. Lightly beat the egg.
  6. Mix the milk and fructose into the beaten egg.
  7. Add this mixture to the mashed yams and beat with a rotary beater until fluffy.
  8. Bake at 325°F (163°C) for 20 minutes.
  9. Turn off the oven and leave the yams in it for an additional 30 minutes.
