Ingredients

  • 2 squeezed lemons or 1/2 cup concentrated lemon juice
  • 1 1/2 cups water
  • 3/4 cup sugar
  • 7 tablespoons flour
  • Pinch of salt
  • 1 egg white
  • 1/2 teaspoon cream of tartar
  • 2 tablespoons cold water

Instructions

  1. Prepare the pie crust or use store-bought crust.
  2. Mix the lemon juice with water in a medium saucepan.
  3. In a separate bowl, stir together sugar, flour, and salt.
  4. Pour the lemon water mixture into the saucepan, stirring well.
  5. Cook over medium heat, stirring constantly, until the mixture thickens.
  6. Pour the lemon filling into the prepared pie shell.
  7. In a bowl, beat the egg white, cream of tartar, and cold water until stiff peaks form.
  8. Spoon the meringue onto the lemon filling, covering completely.
  9. Bake at 375°F until the meringue is golden brown on top.
