Mandarin Meatballs

Ingredients

  • 1 lb. ground beef
  • 1 egg
  • 1/4 c. dry bread crumbs
  • 2 Tbsp. milk
  • 1 tsp. salt
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. cornstarch
  • 1 beef bouillon cube, crushed
  • 1 Tbsp. soy sauce
  • 1 (13 1/2 oz.) can pineapple chunks, drained (reserve 3/4 c. liquid)
  • 1/4 c. cider vinegar
  • 1 (11 oz.) can mandarin oranges, drained

Instructions

  1. Combine beef, egg, bread crumbs, milk and salt.
  2. Shape into 30 1-inch balls.
  3. Heat oil in a frying pan.
  4. Brown meatballs in oil on all sides.
  5. Remove from pan; set aside.
  6. Add cornstarch, bouillon and soy sauce to drippings; stir for 1 to 2 minutes.
  7. Add pineapple liquid and vinegar.
  8. Add pineapple liquid and vinegar.
  9. Bring to a boil; reduce heat to a simmer.
  10. Add meatballs, pineapple and mandarin oranges.
  11. Heat through.
  12. Serve over hot rice.
