Mandarin Meatballs
Ingredients
- 1 lb. ground beef ⓘ
- 1 egg ⓘ
- 1/4 c. dry bread crumbs ⓘ
- 2 Tbsp. milk ⓘ
- 1 tsp. salt ⓘ
- 2 Tbsp. vegetable oil ⓘ
- 2 Tbsp. cornstarch ⓘ
- 1 beef bouillon cube, crushed ⓘ
- 1 Tbsp. soy sauce ⓘ
- 1 (13 1/2 oz.) can pineapple chunks, drained (reserve 3/4 c. liquid) ⓘ
- 1/4 c. cider vinegar ⓘ
- 1 (11 oz.) can mandarin oranges, drained ⓘ
Instructions
- Combine beef, egg, bread crumbs, milk and salt.
- Shape into 30 1-inch balls.
- Heat oil in a frying pan.
- Brown meatballs in oil on all sides.
- Remove from pan; set aside.
- Add cornstarch, bouillon and soy sauce to drippings; stir for 1 to 2 minutes.
- Add pineapple liquid and vinegar.
- Add pineapple liquid and vinegar.
- Bring to a boil; reduce heat to a simmer.
- Add meatballs, pineapple and mandarin oranges.
- Heat through.
- Serve over hot rice.
